There are two ways to get your correct axle bearings; one is to pull the hub and remove the rear seal carefully so you can get the correct seal number and bearings. The seal will have a part number on it as will the face of both the inside and outside bearing. The Greystone # 324-000087 RV Range Hood is 24 inches wide and vents directly horizontally to the rear, through the RV sidewall. The Ventline S0721 Series comes in various widths, and from what I've seen they all vent out the back. If you have a 24 inch available space above your cook top and the Ventilne hood you have vents to the rear, the # 324-000087 would work perfectly for you.

The wheel for a 205/75-15 tire will actually be the same for a 225/75-15 as that last number "15" corresponds to the size of the wheel. If you're talking about the width of the wheel then I would go with the Westlake ST225/75R15 Radial Trailer Tire - Load Range E # LHWL304 as it fits 15" x 5" and 15" x 6" wide wheels which are the 2 most commons widths.

You are correct that Curt does manufacture the Mopar factory 5th wheel hitches, so you can use either the # C16722 (12" diameter) or the # 16721 (10" factory lube plate) as a replacement. For your 2010 Coleman Niagara, the dimensions you gave are a big help. There isn't a perfect fit for the current setup, so you will need to use what is called an outrigger. If you remove the screen on your vent assembly there should be both a brand and model number listed. If you can provide this then I can give you the correct replacement lid.
